Curried sweet potato salad with garlic shrimp
I cut up a whole large sweet potato and baked it in the oven for 40 mins on 400 degrees. Did the garlic in extra virgin olive oil with fresh garlic. mixed 1 tsp curry powder, 1 tsp lime juice, 1 tsp olive oil, some fresh ground pepper and a pinch of sea salt to make the dressing. Tossed the sweet potatoes, green onion, red pepper, apple, and raisins together, added the dressing and a dollup of light mayo and voila! delish! |
